To the disappointment of my Italian heritage and professional chef BFF, I struggle when it comes to cooking. I like the idea of being a wiz in the kitchen, but lack the skills and patience necessary for time-consuming recipes, complex ingredients and washing piles of dishes. Being constantly on the go, I'm on a quest to find and create the quickest, tastiest and healthiest meals---pretty enough for Instagram and simple enough for even the most culinary-challenged. Introducing *drumroll* Bitchen in the Kitchen.
My first Bitchen recipe tackles the most important meal of the day: breakfast. If I am running late in the morning (correction: when I am running late in the morning) and have to choose between making coffee and making breakfast, coffee will always take precedence. Always. Overnight oats are a quick fix for the overtired, overworked overachievers out there.

Paraphernalia needed: 1/2 cup oats, 2/3 cup unsweetened almond milk (I like the vanilla kinda), 1 tablespoon chia seeds, 1 tablespoon of almond butter, blueberries, 1 tablespoon unsweetened shredded coconut, almonds, agave syrup.

Find a jar or container with a matching lid: If your tupperware cabinet looks anything like mine, this will be the biggest challenge of the recipe. Pour 1/3 cup of your milk + the oats into the jar and get mixing. Toss in the chia seeds and almond butter.

Chia seeds are cool because they provide omega-3 fatty acids, antioxidants, fiber, iron, calcium and the energy you need to get your day moving. Your skin, heart, bones and metabolism are all a big fan.
After the addition of the chia and almond butter, you'll likely have a tough time stirring. Add in the remaining milk until everything is evenly mixed.

Top with blueberries, sliced almonds, coconut and really anything else going bad in your fridge. Drizzle a little agave over your creation and if you like, put a lid on it. Refrigerate overnight.

When you're running late in the morning because you hit "snooze" on your alarm four times, grab your jar and go. You might even have enough time to snap a pic so everyone knows just how artsy and #HealthyLiving you are.

You'll still hit traffic. You'll still have to deal with that co-worker you really don't like. However, at least you're not hangry thanks to your gluten-free and vegan AF breakfast.

If upon waking up, you realize you finally have enough gold stars for a free egg sandwich from Starbucks and just can't help yourself, no worries: your overnight oats will stay fresh in the fridge for 4 days. This is one of my go-to, on-the-go breakfasts because it is super simple, jam-packed with nutrients and costs just over $1 per serving.
